About the Process:
This coffee offers a complex bouquet of jasmine, rose, and lavender. Harvesting is done on dry days from the healthiest trees to ensure ripe cherries with high sugar content. After removing floaters and disinfecting with alcohol, cherries undergo a detailed fermentation: 30 hours in open drums, followed by 24 hours of anaerobic fermentation at 16-18°C, and further oxidation. The cherries are then placed in a BioMaster tank for controlled fermentation at 20°C and submerged in hot water for 36 hours to enhance fruitiness. Finally, the coffee undergoes Pristine Precision Drying in a stainless steel dehumidifier, ensuring quality by gradually reducing moisture to 11%
