This variety, discovered 20 years ago in the Brussels region, is new to the market. It has a distinctive spicy cherry flavor and high productivity that supports their livelihood.
Process:
-Only ripe cherries are harvested.
-Fermentation in water tanks for 12 hours, creating a fermentative mass that provides the right amount of sugars to develop the desired profile.
-Due to minimal fermentation, it's crucial to preserve the notes from the previous process. Therefore, drying takes one month under optimal weather conditions.

Water: 200.0 g at 95 Celsius
Brew strength: 1.50 TDS
Flow: High Flow rate 3.8g. Low Flow Rate 2.7g.
Pour:
1.- 50g - 30 seg
2.- 150g - 1.15 min
3.- 200g - 2.14 min
Serve: Between 57ºc and 65ºC
