José Lutrell, an engineer, founded Abu Coffee in Boquete, Panama, to honor his late father, whose grandchildren called him "Abuelo." Located at 1,550 meters above sea level on the slopes of Volcán Barú, the farm benefits from fertile, volcanic soils and a tropical microclimate. The farm grows Geisha and Catuai varietals, with cherries hand-picked in ideal conditions for flavor enhancement. Abu Coffee is known for its innovative fermentation processes that create funky, clean, and high-quality coffees. The name "Abu" pays tribute to his father's legacy. Sustainability is key, with native trees providing shade and biodiversity thriving on the estate. About the process:
The cherries are hand-picked at peak maturation, selected, and floated in mountain spring water. They undergo a two-phase drying process: first, sun-dried for 24 hours on elevated beds, then fermented anaerobically for 144 hours in closed bags submerged in spring water. After fermentation, the cherries are transferred to elevated beds for a final 25-day sun-drying phase
