APROCETU began as a desperate, defiant pact between 17 local farmers from communities like San Rafael and La Potenciana, determined to stop the abandonment of their fields. Today, it has exploded into a thriving collective of 36 families breathing wild, poetic life back into the soil.
This is far more than a traditional micro-mill; it is a sanctuary of communal resilience. By pooling their heritage and defying the odds, passionate micro-producers like Minor Salas have turned the tide, transforming these steep volcanic slopes into a powerhouse for world-class specialty coffee.
