About the process
WHAT IS A Yellow Honey PROCESS?
It belongs to the Honey coffee processes.
In the Yellow Honey process, the coffee cherries are pulped but a precise percentage of the sweet, sugary mucilage is left tightly bound to the parchment. The beans are then immediately moved to drying beds, receiving a balanced amount of shade and sun. As the mucilage dries, it oxidizes into a beautiful yellowish-amber hue, slowly absorbing the natural sugars into the seed. This method bridges the gap between washed and natural coffees, resulting in a cup with amplified body, a velvety, honey-like mouthfeel, and a rich, rounded fruity sweetness without losing structural clarity.
IN THIS COFFEE:
Selected cherries pulped leaving 50-75% mucilage, drying 10-15 days on raised beds to maximize its tropical sweetness.

TYPICAL CUP PROFILE:
Renowned for its intense, complex, and vibrant acidity (often reminiscent of blackcurrant, citrus, and dark berries). It delivers a heavy, syrupy body, deep sweetness, and an exceptionally clean, lingering finish.
GENETIC ORIGIN & HISTORY:
Selected in Kenya during the 1930s by Scott Agricultural Laboratories (hence the 'SL'). It was bred from a single drought-resistant tree found in Tanganyika (now Tanzania) tied to the Bourbon genetic line. While initially developed for its resilience and high yield in East Africa, it has become a legendary heirloom variety worldwide, celebrated strictly for its world-class, competition-level cup quality.
