The Story: From Coffee Collector to Microbiological Alchemist
Deiro García’s journey into specialty coffee didn't follow a conventional path. Driven by an insatiable curiosity for fermentation dynamics, Deiro spent years studying microbiology and food engineering principles to understand what truly happens at a molecular level inside a fermentation tank. What started as small-scale experimentation in Pitalito has evolved into one of Colombia's most revered sensory laboratories, supplying world-competition micro-lots to top global roasters.
Terroir & High-Altitude Cultivation
Located in Pitalito, within Huila’s legendary coffee belt, Finca Lord Voldemort sits at an ideal elevation of 1,800 to 1,950 meters above sea level.
The microclimate here is defined by rich volcanic soils packed with essential minerals for robust root development, dramatic temperature swings and controlled humidity that allow cherries to accumulate maximum Brix (sugar) levels before harvest, and a rich botanical diversity.
Agronomy Meets Precision Fermentation
Deiro García views coffee processing not as a preservation method, but as an active flavor-sculpting discipline. He isolates specific wild yeast and bacterial strains directly from his farm's flora, cultivating custom fermentation starters that dictate the exact aromatic trajectory of each lot.
His signature approach combines:
- Custom Microbiological Inoculation: Propagating isolated yeast and bacterial cultures (mosto) to drive targeted acid profiles and complex ester formation.
- Multi-Stage Oxygen & Temperature Management: Fermenting cherries in custom-built airtight stainless steel reactors with continuous monitoring of pH, temperature, and pressure.
- Precision Thermal Shocking: Utilizing precise water temperature drops (e.g., 85°C to 12°C) post-fermentation to seal volatile aromatics directly into the grain matrix before controlled drying.
