Edwin Noreña, a third-generation coffee producer and agro-industrial engineer at Finca Campo Hermoso, is universally recognized as one of the founding fathers of modern co-fermentation and advanced processing in Colombia.

The Story: Engineering the Future of Fermentation

Edwin Noreña was born into a coffee-farming family in Circasia, Quindío, but his vision went far beyond traditional agricultural methods. Combining his roots in coffee cultivation with formal studies in agro-industrial engineering and Q-Grader expertise, Edwin transformed his family’s estate, Finca Campo Hermoso, into an international epicenter for bioprocessed micro-lots.

Over the past decade, Edwin has redefined what coffee fermentation can achieve. By introducing culinary ingredients, essential oils, beer hops, and fruit inoculations into tightly controlled anaerobic environments, he creates sensory profiles that challenge and expand the global understanding of coffee flavor matrices.

Agronomy Meets Precision Fermentation

Edwin Noreña views post-harvest processing as a canvas for applied microbiology and flavor design.

His signature approach combines:

  •  Co-Fermentation Techniques: Infusing coffee cherries during anaerobic stages with hops, dehydrated fruits, or natural botanicals to build layered aromatic dimensions.
  • Mossto & Carbonic Maceration: Utilizing concentrated coffee fruit must (mossto) and CO2-purged environments to accelerate targeted enzymatic reactions.
  • Multi-Stage Thermal Shock & Controlled Drying:  Sealing delicate essential aromatics into the parchment through rapid water temperature drops before slow, shaded raised-bed drying.
