About the process

WHAT IS A Honey Co-Fermented PROCESS?

It belongs to the Honey coffee processes.

IN THIS COFFEE:

Hand-harvested, high-sugar cherries undergo a 24-hour low-oxygen prep, followed by a 48-hour carbonic maceration to extract a rich, vibrant fruit mossto. This pure juice culture is independently inoculated with active yeasts and dehydrated cranberries for 72 hours. Finally, the coffee is depulped to a thick black honey level, re-submerged in this wild fruit reactor to absorb intense tropical notes, and gently sun-dried.

An outstanding cup quality, typically delivering a bright citric acidity, a solid foundational sweetness, and a medium, smooth mouthfeel with excellent flavor clarity.

GENETIC ORIGIN & HISTORY:

A natural, single-gene dwarf mutation of the Bourbon variety, originally discovered in Minas Gerais, Brazil, in 1937. Its compact, short-statured anatomy is highly advantageous agrononically, allowing producers to optimize land management by planting with significantly higher density while greatly facilitating selective manual harvesting.
