The process begins immediately after harvesting. The hand-picked, perfectly ripe cherries undergo a brief aerobic fermentation in open containers. This initial exposure to oxygen stimulates specific microbial activity, jumpstarting the breakdown of sugars and amplifying the coffee's aromatic complexity. Next, instead of being exposed to direct sun drying, the intact cherries are transferred to raised beds inside specialized greenhouses that are completely covered with a thick, heavy black plastic shade.
