Pioneers of specialty coffee in Costa Rica's Central Valley, the Chacón family has farmed the volcanic slopes of the Poás Volcano since 1936.

Founded in the early 2000s by Oscar Chacón and Francisca Cubillo, Microbeneficio Las Lajas became a world leader in specialized processing after a powerful 2006 earthquake forced them to dry whole cherries without water or electricity, accidentally birthing their legendary, high-end natural protocols.

About the process

WHAT IS A Black Diamond PROCESS?

It belongs to the Natural coffee processes.

The process begins with an immediate aerobic fermentation of the whole, hand-picked cherries in open containers to stimulate microbial activity and amplify aromatic complexity. Next, instead of direct sun drying, the cherries are transferred to raised beds inside specialized greenhouses completely covered with a thick, black plastic shade (hence the name "Black Diamond"). This specialized shading restricts solar radiation and strictly regulates temperature, stretching the drying phase significantly. By slowing down the dehydration process, the dense coffee seeds spend maximum time absorbing the naturally sweet, complex mucilage from the whole fruit.

GUARO fuses the exotic genetics of the Java variety with the legendary Black Diamond natural process from Las Lajas, Costa Rica. Following an aerobic fermentation and an ultra-slow, dark-shaded drying cycle, this Omni roast micro-lot develops spectacular complexity.

Characterized by a highly refined and floral profile, featuring a clean citric acidity, delicate stone fruit notes, a silky body, and an elegant, lingering sweet finish.

GENETIC ORIGIN & HISTORY:

A historic lineage of Ethiopian origin that was initially selected on the island of Java before being introduced to Central America. Morphologically unique, it features elongated seeds and tall trees with bronze-tipped leaves, bearing a striking visual resemblance to the famous Geisha variety.
