WHAT IS A Honey PROCESS?

It belongs to the Honey coffee processes.

IN THIS COFFEE:

The hand-harvested cherries are pulped, intentionally keeping the sugary mucilage intact on the seed. Then it is transferred to a specialized greenhouse, where it goes through a controlled and uniform drying cycle for 25 days on beds under regulated environmental conditions. This slow drying ensures that the natural sugars slowly adhere to the bean to hyper-develop flavor profile.

Known for its excellent structural balance, displaying a robust sweetness reminiscent of rich caramel and chocolate, a round mouthfeel, and a bright, crisp citrus acidity that provides great definition.

GENETIC ORIGIN & HISTORY:

A highly successful and widely celebrated hybrid created by crossing the high-yielding Mundo Novo with the compact Caturra variety, originally developed in Brazil during the mid-20th century. Engineered to combine the robust resilience of its lineage with a smaller plant stature that allows for high-density planting and precise harvesting, Catuai has become a cornerstone of specialty coffee agriculture. When cultivated in premium high-altitude microclimates and nutrient-dense volcanic soils, the variety excels at absorbing complex organic compounds during its maturation cycle. This results in a remarkably dependable, structurally sound cup known for its intense sweetness, clean profile, and exceptional balance.
