WHAT IS A Washed PROCESS?

It belongs to the Washed coffee processes.

The Washed (or wet) process focuses solely on the bean itself, stripping away the fruit before drying begins. First, the freshly harvested coffee cherries are de-pulped to remove the outer skin. They are then placed in fermentation tanks, where naturally occurring enzymes break down the sticky layer of mucilago. Once fermentation is complete, the beans are thoroughly washed with clean water and moved to raised beds or patios to dry. This meticulous process results in an incredibly clean, crisp, and high-acid cup. It is the preferred method for showcasing the pure, unaltered genetic flavor profile and terroir of specialty coffee.

IN THIS COFFEE:

After hand-harvesting the Catigua cherries, they are mechanically pulped to fully remove the outer skin and mucilage. The clean parchment coffee is immediately transferred to a specialized greenhouse, where it undergoes a controlled, uniform drying cycle over 25 days on raised beds under tightly regulated environmental parameters.

GENETIC ORIGIN & HISTORY:

A hybrid variety developed through the rigorous crossing of Catuai Chato and Icatú, originally selected for its exceptional vigor, disease resistance, and outstanding cup potential. Cultivated within elite high-altitude microclimates and nutrient-dense soils, Catigua excels at utilizing slow maturation canopy cycles to absorb complex organic compounds. This structural resilience allows the plant to hyper-concentrate natural organic acids and sugars within the seed. As a result, the variety is highly celebrated in the specialty market for producing a refined, structurally balanced, and clean profile that showcases magnificent enzymatic clarity, elegant floral top-notes, and intense fruit-forward definition.
