About the process

WHAT IS A Washed PROCESS?

It belongs to the Washed coffee processes.

The Washed (or wet) process focuses solely on the bean itself, stripping away the fruit before drying begins. First, the freshly harvested coffee cherries are de-pulped to remove the outer skin. They are then placed in fermentation tanks, where naturally occurring enzymes break down the sticky layer of mucilago. Once fermentation is complete, the beans are thoroughly washed with clean water and moved to raised beds or patios to dry. This meticulous process results in an incredibly clean, crisp, and high-acid cup. It is the preferred method for showcasing the pure, unaltered genetic flavor profile and terroir of specialty coffee.

IN THIS COFFEE:

Whole cherries undergo a controlled CO2 fermentation before washing. The goal is not to create excess intensity, but to amplify floral definition while preserving the clean structure of the Pink Bourbon variety.

The Pink Bourbon is celebrated for its incredibly sweet, clean, and complex cup profile. It features elegant floral aromas combined with a vibrant, crisp acidity reminiscent of pink grapefruit and red berries. Visually and sensorially unique, it often develops distinct notes of tropical fruits (like passion fruit and papaya), brown sugar, and a smooth, velvety body with a long, caramel-like finish.

GENETIC ORIGIN & HISTORY:

A rare and striking natural hybrid, Pink Bourbon is a cross between Yellow and Red Bourbon. First discovered and meticulously isolated in the Huila region of Colombia, this variety stands out because its recessive genes require precise farming practices to prevent it from reverting to red or yellow fruits. Cultivating it is highly challenging, but the reward is exceptional cup quality and superior disease resistance.
