Rather than relying on luck, Sergio leads his collectors with a strict quality-first philosophy: ensuring a meticulous manual harvest where roughly 90% of the picked cherries are at absolute, peak ripeness. By merging the farm's rich natural biodiversity with modern precision techniques, such as rigorous Brix degree sorting, custom floatation, and using strictly filtered water, Sergio carefully guides each micro-lot to unlock its full genetic potential, positioning himself as one of the region's most progressive producers.

WHAT IS A Washed Co-fermented PROCESS?

IN THIS COFFEE:
The selected ripe cherries undergo a 24-hour open-air oxidation before a custom starter culture using Saccharomyces cerevisiae yeasts is fermented independently with local blueberries and blackberries for 48 hours to breed rich red-fruit aromatics. Then this active pre-ferment is mixed with depulped coffee inside sealed tanks for a 72-hour anaerobic fermentation, concluded by a water thermal shock followed by a 12-day drying cycle.

The Pink Bourbon is celebrated for its incredibly sweet, clean, and complex cup profile. It features elegant floral aromas combined with a vibrant, crisp acidity reminiscent of pink grapefruit and red berries. Visually and sensorially unique, it often develops distinct notes of tropical fruits (like passion fruit and papaya), brown sugar, and a smooth, velvety body with a long, caramel-like finish.
GENETIC ORIGIN & HISTORY:
A rare and striking natural hybrid, Pink Bourbon is a cross between Yellow and Red Bourbon. First discovered and meticulously isolated in the Huila region of Colombia, this variety stands out because its recessive genes require precise farming practices to prevent it from reverting to red or yellow fruits. Cultivating it is highly challenging, but the reward is exceptional cup quality and superior disease resistance.
