El Silencio - Sara Gutierrez
Sara Gutierrez represents the brilliant fifth generation of a traditional coffee-growing family in Buenavista, Quindío, who has masterfully transformed her ancestral legacy into a leading beacon of technical innovation across the Cordillera Central.
Sara specializes in cutting-edge bioprocesses—experimenting with controlled alcoholic, lactic, and acetic fermentations using custom yeast strains, mosstos, and craft beer hops. This masterful synergy between deep family heritage and strict scientific control allows her to push flavor thresholds and consistently achieve up to 90 SCA points in her micro-lots.

About the process
WHAT IS A Beer Hops Co-fermented PROCESS?
It belongs to the Experimental coffee processes.
IN THIS COFFEE:
The cherries undergo a triple-floatation sorting through a specialized pump siphon and impurity tanks. Then they are depulped retaining the mucilage before they go to a 72-hour anaerobic fermentation where real beer hops are added to fuse their aromatic oils into the seed. The last step includes a 15 to 25 days natural drying phase on raised African beds.
ABOUT THE VARIETAL
GENERAL INFORMATION:
- NAME: Caturra
- MOTHER SPECIES: Arabica
- RIPE CHERRY COLOUR: Red
TYPICAL CUP PROFILE:
An outstanding cup quality, typically delivering a bright citric acidity, a solid foundational sweetness, and a medium, smooth mouthfeel with excellent flavor clarity.
GENETIC ORIGIN & HISTORY:
A natural, single-gene dwarf mutation of the Bourbon variety, originally discovered in Minas Gerais, Brazil, in 1937. Its compact, short-statured anatomy is highly advantageous agrononically, allowing producers to optimize land management by planting with significantly higher density while greatly facilitating selective manual harvesting.
