WHAT IS A Natural PROCESS?
It belongs to the Natural coffee processes.
In the Natural (or dry) process, the coffee beans are dried inside the cherry. After harvesting, only the ripest cherries are selected and immediately placed on raised drying beds or patios under the sun. The fruit remains completely intact during the entire drying stage, allowing the seeds inside to absorb the natural sugars and organic compounds from the surrounding pulp. This traditional and eco-friendly method produces an incredibly sweet, full-bodied cup with intense, jammy fruit flavors and a complex, winey acidity.
IN THIS COFFEE:
Lost Origin Natural process: inoculated with LOY-007 and LOB-002 cultures in custom tanks for 6.2 days, slow-dried for 33 days under climate control.

TYPICAL CUP PROFILE:
Celebrated for its remarkably smooth, round, and syrupy body. It typically displays a highly refined and delicate acidity, showcasing elegant notes of sweet citrus, soft floral undertones, honey, and light stone fruits, resulting in a beautifully balanced and immaculate finish.
GENETIC ORIGIN & HISTORY:
Discovered in 1870 near the town of Maragogipe in Bahia, Brazil, this variety is a spontaneous natural mutation of the traditional Typica tree. It is world-famous for its giant characteristics: the trees have oversized leaves and produce some of the largest coffee seeds in existence (known as 'elephant beans'). Due to the low yield of the trees and the precision required to roast such massive seeds, it has become a rare and highly sought-after collector’s variety in specialty terroirs like Boquete, Panama.
