Baru Black Mountain - Baru Black Mountain

Nestled at an elevation of 1,350 to 1,500 meters near the majestic Volcan Baru and the UNESCO-protected La Amistad International Park, this farm boasts the perfect terroir. The coffee plants thrive in mineral-rich, dark volcanic soil under the protective canopy of century-old trees. This unique microclimate and natural shade yield a well-balanced, aromatically complex cup with a characteristic sweetness that truly reflects its extraordinary Panamanian origin.

Beyond its remarkable flavor profile, Baru Black Mountain is deeply committed to sustainable, innovative, and ethical farming. The cherries are selectively hand-harvested and processed using a unique dehydration system on African beds, alongside exciting natural and honey processes. The estate champions eco-friendly practices, such as utilizing fresh stream water for washing, and prioritizes social responsibility by providing vital medical and educational support to its workers' families. Every cup offers a taste of Panamanian excellence that supports both the environment and the local farming community.

About the process

WHAT IS A Natural Extra Mosto PROCESS?

It belongs to the Experimental coffee processes.

IN THIS COFFEE:

For this specific lot, the protocol begins with the selective manual harvesting and rigorous density sorting of perfectly ripe cherries, which first undergo a 48-hour controlled oxidation to unlock essential flavor precursors. Carefully selected coffee must is then introduced before sealing the cherries in hermetic tanks for a 72-hour, temperature-controlled anaerobic fermentation, allowing the must's rich sugars and aromatics to deeply penetrate the fruit and dramatically enhance its sweetness. Finally, the coffee experiences a slow, meticulously managed drying phase across African raised beds and dark rooms.

ABOUT THE VARIETAL

GENERAL INFORMATION:

  • NAME: Pacamara
  • MOTHER SPECIES: Arabica
  • RIPE CHERRY COLOUR: Red

TYPICAL CUP PROFILE:

The Pacamara varietal is highly prized in the specialty coffee world for its exceptional complexity and dynamic flavor structure. It typically delivers a medium-to-full, syrupy body paired with a vibrant, elegant acidity. The cup is intensely aromatic, frequently characterized by pronounced floral notes, sweet citrus, juicy stone fruits, and an underlying sweetness that often transitions into a lingering chocolate or caramel finish.

GENETIC ORIGIN & HISTORY:

Pacamara is a celebrated hybrid created in El Salvador in 1958 by the Salvadoran Institute for Coffee Research (ISIC). It is the result of crossing the Pacas varietal with Maragogipe . The breeding program's objective was to combine the compact size and resilience of the Pacas tree with the outstanding cup quality and massive bean size of Maragogipe. After nearly three decades of meticulous genetic selection, the varietal was officially released to coffee farmers in the late 1980s. Today, it stands as one of the most prestigious varietals in specialty coffee, frequently dominating international quality competitions.
